The first week of November is Vegetarian Awareness Week, and while not everyone is interested in adopting a lifestyle of vegetarianism, many people could benefit by eating more plant-based foods.
If you and your loved one have decided that you want to eat more vegetarian meals, do an online search for some new recipes. Your loved one’s home care provider can help her with the cooking of course. You and your family member could sit down and plan the meals and give the recipes to her caregiver so they are easily accessible.
One way that people cut down on red meat, processed meat and foods high in animal fats is to dedicate two days per week to eat vegetarian meals. They find this quite easy to do, and it makes a big positive change without being too difficult to implement.
Some may ask how to get enough protein in a vegetarian meal? There are actually quite a few high protein choices in the plant family. They include legumes such as lentils, dry peas and dry beans, quinoa, hemp seeds, chia seeds and more. A person can also combine foods such as beans and rice to get complete proteins for each meal.
For those who have never cooked dry beans before, it’s not as difficult as it seems. There are actually several different ways of doing this. Some people soak the beans overnight and then cook them on the stove the next day. Some swear by the crockpot method, which involves a pre-soak as well, and then a nice long slow cook. Others use a pressure cooker which cuts down on cooking time but is a little more finicky to operate.
Did you know you can still make a fabulous sandwich that’s vegetarian? Here are just a few ideas:
- Swiss cheese and pesto sandwich with tomatoes and leaf lettuce
- Hummus sandwich with cucumber and red onion slices
- Avocado, tomato and provolone cheese sandwich
- Spinach, artichoke and cheddar sandwich
Most vegetarians allow cheese in their diets; if you prefer, you can go dairy-free or purchase vegetarian cheese.
Vegetarian awareness week is also a good time to contemplate on the different eating lifestyles that people have, and show respect for each person’s choices. The vegetarian way of eating promotes eating a wide variety of many different fruits, vegetables and grains. Many restaurants have caught on to the healthiness of vegetarian meals and offer alternate choices to the traditionally meat-heavy fast food meals.
